About me

With such a catchy original title how can you not want to learn more.

My name is Nicole and I have had all kinds of different relationships with food. The past few months however something clicked and I’ve been able to start living the life I always envisioned for myself.

I eat vegetables, all sorts of vegetables. In fact mostly vegetables. And I cook most of this food, and plan ahead so I have enough to eat and don’t end up getting McDonalds for lunch. In fact I am now that person who tries to eat up the remaining produce I have at home instead of ignoring its existence while it rots away in the fridge and I get McDonald’s again.

While it all feels too good to be true, I’m trying to keep this going by keeping track of the recipes and random meals I have liked. I know what’s given me enough confidence to really embrace healthy eating is finding simple and honest recipes that don’t take half of Whole Foods to make. Ones that remind me it doesn’t have to be fancy, just needs to feed me.

Also I don’t measure things. But hopefully my descriptions give a decent idea of how to replicate something close to the picture. Otherwise I suggest google.
