Eggplant Flatbread?

That time I made “pizza” but someone rudely informed me it was not pizza unless it had some kind of cheese.

Ingredients:

  • Garlic Herb Pizza Dough from Trader Joes (1 pkg)
  • Eggplant slices (like 1/3 of one?)
  • Tomato Slices (whatever you want)
  • Mushrooms (not that many, like a normal bowl full of sliced)
  • Chopped Kale (enough to cover the pizza, sorry “flatbread”)
  • Vegan Pesto
    • Spinach
    • Soaked Cashews
    • Pine nuts
    • Nutri Yeast
    • Garlic Cloves
    • Lemon Juice
    • Salt
    • Pepper

Follow the instructions on the pizza dough, also read instructions on pizza dough before you chop everything and are actually ready for the pizza dough. This is because the dough has to sit for 30 minutes or so before you can spread it.

While dough is sitting, roast slices of eggplant in 400 degree oven for 10ish minutes.

Put ingredients in small blender to make vegan pesto. One day look into how to blend spinach into something in an effective and not stress inducing way.

Once dough is all settled, spread on oiled pan (oh add olive oil to that list), then spread vegan pesto, put on toppings and things. Bake according to Trader Joes instructions.

Oh also add oregano and basil on top of pizza.
